Serves: 10 Servings
Ingredients
  • 2 tbsp olive oil
  • 1 chopped red onion
  • 3 cloves garlic finely chopped
  • 1 cup chopped zucchini
  • 1 cup cubed butternut squash
  • 1 cup green beans sliced in halves
  • ½ cup halved cherry tomatoes
  • 1 small can white beans
  • 1 large can crushed tomatoes
  • 5 cups vegetable broth
  • 1 tsp crushed red pepper flakes
  • 1 tbsp dried rosemary
  • 1 tsp kosher salt
  • parmesan shavings (garnish)
Instructions
  1. Place all ingredients in a large crock pot and set on high setting for 6 hours until all vegetables are tender.
  2. Stir thoroughly.
  3. Serve with parmesan shavings.

    Any suggestions for doing this on the stove top instead of in a slow cooker?

      You can certainly make it on the stove top. Simply begin by sautéing onion and garlic and olive oil on medium heat until translucent. Then, add remaining vegetables and continue cooking for about 4 minutes. Add broth and spices. Allow to come to a boil and reduce heat to low for 15 minutes or until vegetables are tender. Serve with parmesan on top.
