Autumn Minestrone Soup
Total time
- 2 tbsp olive oil
- 1 chopped red onion
- 3 cloves garlic finely chopped
- 1 cup chopped zucchini
- 1 cup cubed butternut squash
- 1 cup green beans sliced in halves
- ½ cup halved cherry tomatoes
- 1 small can white beans
- 1 large can crushed tomatoes
- 5 cups vegetable broth
- 1 tsp crushed red pepper flakes
- 1 tbsp dried rosemary
- 1 tsp kosher salt
- parmesan shavings (garnish)
- Place all ingredients in a large crock pot and set on high setting for 6 hours until all vegetables are tender.
- Stir thoroughly.
- Serve with parmesan shavings.
