Instructions
In a small bowl, combine flour, baking soda, baking powder, and salt.
In a stand mixer cream together shortening, eggs, orange juice, vanilla and sugar. Slowly add the dry ingredients until combined.
Remove dough from mixer and form a ball. Wrap in plastic wrap and refrigerate for two hours (or more).
When ready, preheat oven to 350 degrees F and remove dough from refrigerator.
Divide dough into four equal parts. With rolling pin, roll one part out to ⅓ inch thick. With a circular cookie cutter (3 to 4 inches in diameter), cut out circles and fill with about a teaspoon of filling. Be careful not to overstuff the cookies. Pinch edges together to form a triangle.
Repeat this process with the rest of the dough.
