Ingredients
  • 1 cup sugar
  • ½ cup unsweetened cocoa
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 3½ cups all purpose flour
  • ½ tsp salt
  • 3 eggs
  • 1 cup shortening
  • 5 tbsp orange juice
  • 1 tsp. vanilla
  • Filling:
  • *Feel free to use any filling you like. Here are some suggestions that work well.
  • Fruit Preserves
  • Chocolate Chips
  • Peanut butter
  • Dulce De Leche
  • Pumpking Butter
Instructions
  1. In a small bowl, combine flour, baking soda, baking powder, and salt.
  2. In a stand mixer cream together shortening, eggs, orange juice, vanilla and sugar. Slowly add the dry ingredients until combined.
  3. Remove dough from mixer and form a ball. Wrap in plastic wrap and refrigerate for two hours (or more).
  4. When ready, preheat oven to 350 degrees F and remove dough from refrigerator.
  5. Divide dough into four equal parts. With rolling pin, roll one part out to ⅓ inch thick. With a circular cookie cutter (3 to 4 inches in diameter), cut out circles and fill with about a teaspoon of filling. Be careful not to overstuff the cookies. Pinch edges together to form a triangle.
  6. Repeat this process with the rest of the dough.
