Not Your Average Wonton Soup

Ingredients
  • Wontons:
  • ½ lb lean ground kosher turkey
  • ¼ cup thinly diced scallions
  • 1 egg beaten
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp brown sugar
  • 1 tbsp fresh grated ginger
  • pinch kosher salt
  • pinch ground black pepper
  • 40 wonton wrappers
  • small bowl of water to seal wantons
  • Broth:
  • 5 cups vegetable broth
  • ¼ cup soy sauce
  • 1 tbsp minched garlic
  • 1 tbsp fresh grated ginger
  • ¼ cup thinly diced scallions
  • 2 tbsp brown sugar
  • 3 cups Asian vegetables (snow peas, bell peppers, broccoli, bok choy..)
Instructions
  1. In a medium bowl, combine ground turkey with all ingredients up to black pepper.
  2. Fill each wonton wrapper with 1 teaspoon of meat mixture and seal the edges with water, creating a triangle-shaped dumpling.
  3. Then pull bottom two corners together and seal with water yielding wonton shape.
  4. Most wonton wrapper packages have a diagram explaining how to fold each wonton.
  5. Set wontons on a baking sheet once they are shaped and set aside.
  6. In a large soup pot, heat all broth ingredients except for vegetables and allow to boil for several minutes.
  7. Once broth is boiling consistently, gently drop each wonton in to the soup.
  8. When wontons are fully cooked, they will float to the surface of the pot.
  9. Once wontons are cooked (about ten minutes), add vegetables and serve immediately so that vegetables are still slightly crunchy.
