Pumpkin Spice Challah

Ingredients
  • 3 tbs. yeast
  • 1 cup warm water
  • ½ cup honey
  • 3 eggs
  • ½ cup sugar
  • ½ cup canned pumpkin
  • pinch of salt
  • ¼ cup oil
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 6-9 cups all purpose flour
  • 1 egg yold plus 1 tbs. water (egg wash)
Instructions
  1. In the mixing bowl, combine yeast with warm water and let stand for 5 minutes until you see bubbles.
  2. Gradually add honey, eggs, sugar, pumpkin, salt, oil, and spices on low setting with whisk attachment until completely mixed.
  3. Switch whisk attachment for dough attachment and gradually begin adding flour 1 cup at a time.
  4. Keep adding flour until mixture becomes a firm sticky dough (not liquidy).
  5. Transfer dough to a greased bowl and cover with moist towel for several hours until dough has doubled in size.
  6. Once dough has doubled in size, remove from bowl and knead on a floured surface.
  7. Braid as desired and place on greased baking sheets.
  8. Brush braided dough with egg wash and bake at 400 degrees for 30-40 minutes or until golden brown.
