Parmesan Crusted Tilapia

Ingredients
  • 4 fresh tilapia filets
  • ¼ cup light mayo
  • ¼ cup Italian bread crumbs
  • ¼ cup grated parmesan
  • ¼ stick of cold butter
  • 1 bunch fresh parsley chopped (use as little or as much as desired)
  • pinch of salt
  • pinch of pepper
Instructions
  1. Preheat over to 400 degrees F.
  2. Line a large baking pan with parchment.
  3. Wash tilapia filets and gently pat dry with paper towels, removing as much moisture as possible.
  4. Place filets on parchment and use a brush to lightly coat each filet with a thin layer of mayo.
  5. This will serve as glue for the crumb topping.
  6. In a separate bowl, combine bread crumbs, parmesan, butter, parsley, salt and pepper.
  7. Mix until the butter takes the shape of small peas or pebbles.
  8. Once combined, press the crumb topping on to the mayo surface of each filet.
  9. It will be slightly messy, but have no doubt, once it bakes, it is utter perfection.
  10. Once each filet has a ½ inch layer of topping pressed in to it, bake for about 20 minutes or until topping is crispy and golden brown. Enjoy.
