Ingredients
  • 1 large English cucumber cut into tiny cube-shaped pieces
  • 2 large vine ripened tomatoes cut into tiny cube-shaped pieces
  • Juice of 2 large lemons
  • 1 tbsp olive oil
  • ΒΌ cup chopped fresh parsley
  • 1 tsp Kosher salt
  • 1 tsp ground pepper
  • 4 hard-boiled eggs
Instructions
  1. In a medium bowl, combine cucumber, tomatoes, lemon juice, olive oil, parsley salt and pepper.
  2. Toss gently.
  3. Serve in bowls and top each bowl with a hard-boiled egg. Serve with fresh pita and humus.
