Begin by caramelizing onion over low heat with butter, olive oil thyme, salt and pepper for about ten minutes or until glossy and transparent looking.
Add wine and continue cooking for another five minutes.
Remove pan from heat.
Using two-inch round cookie cutters, cut out about twenty round pieces of the puff pastry and place on a parchment-paper-lined baking pans (2) about an inch apart.
Begin assembling tarts by placing a teaspoon of onions directly in center of each pasty.
Then sprinkle about a teaspoon of parmesan on top of the onions.
Next, either place a tomato or several sliced mushrooms on top.
Finally, top with several crumbles of goat cheese.
Remember to place all pastry fillings as close to center of pastry as possible, as it will allow for the uncovered edges to puff up in the oven.
Bake pastries for about 12 minutes or until slightly golden and puffed up.
Eat warm or at room temperature.
