S'mores Rice Cereal Treats

Ingredients
  • 6 cups rice cereal
  • 4 tbsp butter, melted and unsalted
  • 12 oz small marshmallows
  • 12 oz semi-sweet chocolate chips
  • 3 tbsp heavy cream
  • 1.5 cup graham cracker crumbles (pulse graham crackers in food processer)
Instructions
  1. In a large bowl mix rice cereal with melted butter.
  2. Heat 10 oz of the marshmallows in microwave for approximately two minutes, pausing every 30 seconds to mix with a buttered spatula. (Be careful not to overcook the marshmallows. You should remove the bowl as soon as the marshmallows are just barely melted).
  3. Once the marshmallows are melted, mix them into the rice cereal mixture. Mix in the remaining 2oz of whole marshmallows.
  4. Pour rice cereal mixture into an 11"x15" pan and flatten top with a spatula to create an even surface.
  5. Let the cereal treats set on the counter for at least one hour.
  6. Then cut the cereal treats into rectangular chunks (about 2"x4") and set onto serving platter lined with parchment paper.
  7. In a medium bowl, microwave semi-sweet chocolate chips for approximately 2 minutes, stopping every 30 seconds to mix the chocolate chips with a spoon. (Again, be careful not to overcook the chocolate. You should remove the bowl as soon as the chocolate chips are just barely melted.)
  8. Mix the heavy cream into the melted chocolate until the consistency is smooth.
  9. Pour graham cracker crumbles onto a plate.
  10. Dip one edge of each rice cereal treat into the melted chocolate and then immediately dip into the graham cracker crumbles. Then put the rice cereal treat down onto the parchment paper and let it set for about another hour.
  11. Repeat with the rest of the treats.
  12. Enjoy!
