Pineapple Fried Rice

Ingredients
  • 2 tbsp vegetable oil
  • 1 tbsp toasted sesame oil
  • 1 cup frozen peas and carrots mix
  • 4 eggs whisked together
  • ¾ cup pineapple chunks (fresh, canned or frozen)
  • ¼ cup scallions, sliced
  • 2 cups cooked brown rice
  • ¼ cup soy sauce
Instructions
  1. Heat a large wok with vegetable oil and sesame oil on medium heat.
  2. Add frozen peas and carrots and continue to cook on medium heat for 1 minute.
  3. Use a spoon to move peas and carrots to one side of wok and add whisked eggs into wok opposite the peas and carrots.
  4. Use a spoon or spatula to scramble the eggs.
  5. Once the eggs are cooked well done, mix with peas and carrots.
  6. Add pineapple chunks, cooked rice, half of sliced scallions, and soy sauce.
  7. Mix well and continue to cook over low heat for about 4 minutes.
  8. Remove from heat once rice is completely hot and garnish with remaining scallions.
