Flavorful Grilled Artichokes

Ingredients
  • 2 large globe artichokes
  • 4 tbsp olive oil
  • 2 shallots chopped finely
  • 2 cloves fresh minced garlic
  • ¼ cup white wine
  • Pinch of salt
  • Pinch of pepper
  • Juice of one lemon
  • 1 lemon sliced into wedges for garnish
Instructions
  1. Bring a large pot of water to a steady boil.
  2. As water is heating, use a sharp knife to slice both artichokes in half length-wise.
  3. Once water is boiling, places artichoke halves in water and allow to cook for 15 mins or until artichokes are slightly tender.
  4. Use tongs to remove artichokes.
  5. Drain excess water and set aside.
  6. Heat a large grill pan on low with olive oil, shallots, and garlic.
  7. Cook for about a minute.
  8. Add wine, salt and pepper.
  9. As soon as wine begins to heat, less than a minute, add the four artichoke halves flat-side down onto hot grill pan with shallots and garlic beneath them.
  10. Turn heat up to medium and allow artichokes to grill for about five minutes or until the bottoms have grill marks.
  11. Pour lemon juice over tops of artichokes and allow to cook one more minute.
  12. Remove from heat and serve with browned shallots, garlic and lemon wedges.
