Asian Inspired Quinoa Salad

Ingredients
  • Salad:
  • 2 cups cooked quinoa
  • 2 carrots finely shredded
  • ¼ cup sugar snap peas sliced in halves
  • ¼ cup shelled edamame
  • ¼ cup whole roasted cashews
  • ¼ cup dried cranberries
  • Black sesame seeds for garnishing
  • Dressing:
  • ½ cup teriyaki sauce
  • 2 tbsp creamy peanut butter
  • 1 tbsp fresh grated ginger
  • 1 tsp fresh minced garlic
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey
Instructions
  1. In a large bowl, combine all salad ingredients. Set aside.
  2. In a small bowl, whisk together all dressing ingredients until mixture is smooth and creamy.
  3. Pour dressing over salad and mix thoroughly to ensure all ingredients are coated in dressing. Cover salad with plastic wrap and chill for at least one hour before serving.
  4. Garnish with black sesame seeds.
