Marinated Cauliflower Salad

Ingredients
  • ½ large head of raw cauliflower, chopped into one-inch pieces
  • ½ cup white vinegar
  • ¼ cup EVOO
  • 3 tbsp white sugar
  • 2 tsp coarse Kosher salt
  • 1 tsp cracked pepper
  • 1 tsp ground turmeric
  • ¼ cup fresh cilantro leaves
Instructions
  1. In a large bowl, whisk together the white vinegar, EVOO, sugar, Kosher salt, cracked pepper, and turmeric.
  2. Mix in the cauliflower pieces until every piece is evenly coated.
  3. Cover and chill in fridge for a minimum of 2 hours or overnight.
  4. Garnish with cilantro leaves. Enjoy!
