Garlic Herb Rainbow Potatoes

- 3 cups small rainbow potatoes, washed and quartered
- 3 tbsp EVOO
- 8 garlic cloves, slivered
- ¼ cup fresh dill, chopped
- ¼ cup fresh parsley, chopped
- Salt and Pepper to taste
- Preheat open to 400 degrees F.
- Assemble potatoes on a large baking sheet.
- Drizzle with EVOO, salt, and pepper.
- Bake for 25 minutes.
- Remove baking sheet from oven and sprinkle the potatoes with garlic. Continue baking the potatoes for another 20 minutes.
- Remove from oven, and toss with dill and parsley.
- Enjoy!
