Irresistible Pesto Pastries

Ingredients
  • 1 package (2 sheets) puff pastry defrosted in refrigerator overnight
  • ½ cup pesto sauce
  • ½ cup sundried tomatoes drained and chopped
  • ½ cup crumbed goat cheese
  • 1 egg yolk whisked with one tbsp. water
Instructions
  1. Preheat oven to 400 degrees F and cover two baking sheets with parchment paper.
  2. Lay one cold sheet of puff pastry on a floured surface.
  3. Spread half of the pesto sauce evenly over the puff pastry covering entire surface.
  4. Sprinkle half of the sundried tomatoes and goat cheese over the pesto as evenly as possible.
  5. Carefully begin rolling the puff pastry tightly from the long end until you are left with one long roll. Using a sharp knife, gently slice 1-inch rounds and carefully lay them flat on prepared baking sheets about 1-inch apart.
  6. Repeat with second sheet of puff pastry.
  7. Brush each spiral with egg wash and bake for about 10-12 minutes or until dough puffs up and turns golden brown.
  8. Allow to cool for about 2 minutes and serve immediately.
