Ginger Root Tea with Lemon and Mint

Ingredients
  • ⅓ cup ginger, peeled and cut into 1" cubes
  • ½ cup fresh mint leaves
  • 1 lemon, sliced into rounds
  • 4 cups water
  • Optional: honey to sweeten
Instructions
  1. In a large pot, boil water with the ginger cubes for approximately 30 minutes. You will know it's done because the water will turn slightly brown and will taste pleasantly spicy.
  2. Prepare two mugs, each with half of the mint leaves and one or two lemon rounds.
  3. Pour ginger water over the lemon and mint. The hot water will release the oils from the lemon peel and mint leaves. Let stand for 3 minutes.
  4. Add honey if desired.
  5. Enjoy!
