Fresh Green Pea Soup

Ingredients
  • 1 tbsp olive oil
  • ¼ cup chopped yellow onion
  • ¼ cup chopped leeks
  • ¼ cup white cooking wine
  • 2 cups frozen peas
  • 3 cups vegetable broth
  • ¼ cup heavy cream
  • 2 tbsp chopped fresh mint
  • 1 tsp kosher salt
  • 1 tsp ground pepper
  • sour cream (garnish)
  • fresh parsley (garnish)
Instructions
  1. In a medium sized pot, sauté onion and leeks with olive oil on medium heat until translucent, about 4 minutes.
  2. Add wine and continue cooking until liquid evaporates for another 4-5 minutes, stirring constantly.
  3. Add frozen peas and broth and continue to cook on medium.
  4. Bring to a boil and reduce heat to low.
  5. Use a hand immersion blender to puree the soup directly in the pot as it cooks.
  6. Puree as much or as little as preferred.
  7. Add cream, mint, salt and pepper.
  8. Stir well and continue to cook for about 3 more minutes.
  9. Serve and garnish with a dollop of sour cream and fresh parsley.
