Spiced Lentil Soup

Ingredients
  • 2 tbsp EVOO
  • 1 large onion, diced
  • 3 carrots, diced
  • 4 celery stalks, diced
  • 2 cloves garlic
  • ½ cup white wine
  • 6 ounces orange lentils
  • 1 14.5 oz can diced tomatoes, low sodium and drained
  • 1 tsp coriander
  • 2 tsp turmeric
  • 2 tsp cumin
  • 1 14.5 ounce can coconut milk
  • 6 cups vegetable broth
  • Salt and Pepper to taste
Instructions
  1. In a large pot, saute onions, carrots, and celery in EVOO for approximately five minutes over medium-high heat or until they begin to soften. Add garlic and saute for another two minutes.
  2. Add white wine and scrape any brown bits on bottom of pot. Reduce for three minutes.
  3. Add the lentils, diced tomatoes, coriander, turmeric, cumin, coconut milk, vegetable broth and a large pinch of salt and pepper.
  4. Let simmer over low heat for 45 minutes, stirring regularly.
  5. Garnish with parsley. Enjoy!
