Sublime Lemon Greek Yogurt Cake

Ingredients
  • Cake:
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup Greek yogurt
  • 1 cup sugar
  • 3 eggs
  • 2 tsp grated lemon zest
  • 1 tsp vanilla extract
  • ½ cup vegetable oil
  • Syrup:
  • ½ cup sugar
  • ½ cup fresh squeezed lemon juice
  • Glaze:
  • 1 ½ cups confectioner’s sugar
  • 3 tbsp fresh squeezed lemon juice
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Grease an 8½ by 4¼ by 2½-inch loaf pan.
  3. In a large bowl, combine flour, baking powder and salt.
  4. Set aside. In a separate large bowl, whisk together yogurt, sugar, eggs, zest, vanilla and oil.
  5. Gradually add the flour mixture to wet ingredients until all ingredients are well-combined.
  6. Pour into prepared loaf pan and bake for about 45-50 minutes or until a toothpick is inserted and comes out clean.
  7. While the cake is baking, combine sugar and lemon juice in small pot on stove and cook on low for about 5 minutes stirring constantly.
  8. When the cake is removed from oven, slowly pour the lemon syrup evenly over the cake and allow to soak into the cake.
  9. As the cake is cooling, prepare the glaze by whisking together confectioner’s sugar and lemon juice until smooth.
  10. Once cake has cooled, either pour glaze over the cake or serve alongside the cake.
