Sublime Lemon Greek Yogurt Cake

- Cake:
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup Greek yogurt
- 1 cup sugar
- 3 eggs
- 2 tsp grated lemon zest
- 1 tsp vanilla extract
- ½ cup vegetable oil
- Syrup:
- ½ cup sugar
- ½ cup fresh squeezed lemon juice
- Glaze:
- 1 ½ cups confectioner’s sugar
- 3 tbsp fresh squeezed lemon juice
- Preheat the oven to 350 degrees F.
- Grease an 8½ by 4¼ by 2½-inch loaf pan.
- In a large bowl, combine flour, baking powder and salt.
- Set aside. In a separate large bowl, whisk together yogurt, sugar, eggs, zest, vanilla and oil.
- Gradually add the flour mixture to wet ingredients until all ingredients are well-combined.
- Pour into prepared loaf pan and bake for about 45-50 minutes or until a toothpick is inserted and comes out clean.
- While the cake is baking, combine sugar and lemon juice in small pot on stove and cook on low for about 5 minutes stirring constantly.
- When the cake is removed from oven, slowly pour the lemon syrup evenly over the cake and allow to soak into the cake.
- As the cake is cooling, prepare the glaze by whisking together confectioner’s sugar and lemon juice until smooth.
- Once cake has cooled, either pour glaze over the cake or serve alongside the cake.
