In a stand mixer, cream the brown sugar, egg, butter, peanut butter, and vanilla extract. Once all of the ingredients are evenly combined, add the flour, salt, and baking soda. Be careful not to over mix.
Remove mixing bowl from mixer. Fold chocolate chips in with a spatula.
Scoop cookie dough onto parchment paper lined cookie sheets with a two-inch cookie scoop, making sure to leave about two inches in between each cookie.
Bake for approximately 10 minutes or until golden brown. Enjoy!
