Turmeric Cauliflower with Herb Yogurt Sauce

Ingredients
  • 1 medium cauliflower, chopped into small pieces
  • 4 tbsp EVOO
  • 1 tbsp turmeric
  • 8 oz full fat Greek yogurt
  • 2 tbsp full fat sour cream
  • Juice of one lemon
  • 2 garlic cloves, minced
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh mint, finely chopped
  • Salt and Pepper to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. Toss cauliflower in 3 tbsp EVOO, turmeric, salt, and pepper, and roast for 45 minutes or until golden brown.
  3. While the cauliflower is in the oven, mix Greek yogurt, sour cream, lemon juice, 1 tbsp EVOO, garlic, dill, parsley, mint, salt and pepper. Chill the sauce until cauliflower is ready,
  4. Serve and enjoy!
