Quick Chinese Chicken Salad

Ingredients
  • Salad:
  • 2 baked boneless skinless chicken breasts cut into slices
  • ½ cup teriyaki sauce
  • 1 head of chopped romaine lettuce
  • ½ cup shredded carrots
  • ½ cup mandarin orange slices
  • ¼ cup honey roasted slivered almonds
  • ¼ cup sliced scallions
  • ¼ cup crispy Chinese noodles
  • 1 tbsp black sesame seeds
  • Dressing:
  • ½ cup teriyaki sauce
  • ¼ cup rice wine vinegar
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • ½ tsp grated ginger
Instructions
  1. In a small bowl, whisk together ingredients for dressing. Set aside.
  2. In a medium bowl, coat warm chicken slices with teriyaki sauce. Set aside.
  3. In a large bowl, toss together remaining salad ingredients except sesame seeds.
  4. Toss chicken pieces with salad, making sure to drain excess teriyaki sauce.
  5. Serve salad on plates and drizzle with salad dressing.
  6. Sprinkle salad with sesame seeds.
