Sweet and Savory Acorn Squash
- 1 large acorn squash
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1 tsp sea salt
- ¼ cup dried cranberries
- Preheat oven to 375 degrees F.
- Carefully slice squash in half vertically.
- Use a spoon to scoop out seeds and stringy part of squash.
- Lay each half of squash on cutting board with flat side down and cut into 1-inch thick half rings.
- Place squash pieces in a bowl and mix together with oil, sugar, cinnamon and salt until each piece is well coated.
- Lay pieces on a non-stick baking sheet. Sprinkle cranberries evenly over squash slices.
- Roast for about 45 minutes or until squash turns golden brown.
