Sweet and Savory Acorn Squash

Serves: 4 Servings
Ingredients
  • 1 large acorn squash
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp sea salt
  • ¼ cup dried cranberries
Instructions
  1. Preheat oven to 375 degrees F.
  2. Carefully slice squash in half vertically.
  3. Use a spoon to scoop out seeds and stringy part of squash.
  4. Lay each half of squash on cutting board with flat side down and cut into 1-inch thick half rings.
  5. Place squash pieces in a bowl and mix together with oil, sugar, cinnamon and salt until each piece is well coated.
  6. Lay pieces on a non-stick baking sheet. Sprinkle cranberries evenly over squash slices.
  7. Roast for about 45 minutes or until squash turns golden brown.
