Cheesy Jalapeno Cornbread

Ingredients
  • 1 ¼ cups all purpose flour
  • ¾ cup corn meal
  • ¼ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup buttermilk
  • ¼ cup vegetable oil
  • 1 can creamed corn
  • 1 egg
  • ¾ cup grated cheddar cheese
  • 2 jalapeno peppers sliced in rounds
Instructions
  1. Preheat oven to 400 degrees F.
  2. Grease a 9-inch pan.
  3. Whisk together dry ingredients in a large bowl.
  4. Gradually add wet ingredients, whisking gently until well combined.
  5. Mixture should look clumpy. Fold ½ cup of grated cheese into mixture with a spatula.
  6. Pour mixture into prepared baking pan.
  7. Sprinkle remaining cheese and jalapeno slices over the top of mixture.
  8. Bake for about 20 minutes or until edges turn golden brown.
