In a large saute pan over medium-high heat, drizzle EVOO and sesame oil, and assemble halved brussels sprouts flat side down. Let them cook for 3 minutes before adding shiitake mushrooms on top of the brussels sprouts. Stir and drizzle soy sauce over the brussels sprouts and mushrooms.
Saute for another 3 minutes. Remove from heat and sprinkle with toasted sesame seeds.
