Classic Blueberry Muffins
- 2 ½ cups flour
- 2 tsp baking powder
- ½ tsp baking soda
- ¾ cups sugar
- ¼ tsp salt
- 2 eggs
- 1 cup buttermilk
- ½ cup oil
- 1 tsp vanilla
- 2 cups fresh or frozen blueberries
- Preheat oven to 375 degrees F.
- Prepare a twelve-muffin tin with paper muffin liners and/or non-stick cooking spray.
- In a large bowl, whisk together all dry ingredients. Then gradually add wet ingredients whisking continuously.
- Once well-combined, gently fold in blueberries. Pour muffin batter into muffin cups, filling each about ⅔ of the way to the top of each cup.
- Bake muffins for about 20 minutes or until slightly golden on top.
