Classic Blueberry Muffins

Ingredients
  • 2 ½ cups flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¾ cups sugar
  • ¼ tsp salt
  • 2 eggs
  • 1 cup buttermilk
  • ½ cup oil
  • 1 tsp vanilla
  • 2 cups fresh or frozen blueberries
Instructions
  1. Preheat oven to 375 degrees F.
  2. Prepare a twelve-muffin tin with paper muffin liners and/or non-stick cooking spray.
  3. In a large bowl, whisk together all dry ingredients. Then gradually add wet ingredients whisking continuously.
  4. Once well-combined, gently fold in blueberries. Pour muffin batter into muffin cups, filling each about ⅔ of the way to the top of each cup.
  5. Bake muffins for about 20 minutes or until slightly golden on top.
