Chicken Agrodolce (Sweet and Sour)

Ingredients
  • 2 lbs Chicken, cut up
  • 1 cup red wine vinegar
  • ½ cup dates, chopped
  • ⅔ cup green olives with pimentos, halved
  • ¼ cup capers
  • 4 garlic cloves, thinly sliced
  • ¼ cup honey
  • ¼ cup EVOO
  • Salt and pepper to taste
  • 1 tbsp fresh flat leaf parsley, finely chopped
Instructions
  1. In a large bowl, whisk together vinegar, dates, olives, capers, garlic, honey, EVOO, Salt and Pepper. Place chicken in a large zip locked bag and pour marinade over. Seal the bag and massage the marinade into the chicken. Let the chicken marinate over night or for up to three days.
  2. Preheat oven to 400 degrees F.
  3. Assemble chicken and marinade on a baking sheet, making sure not to overcrowd the chicken.
  4. Bake for 1 hour or until chicken is cooked through.
  5. Garnish with parsley.
  6. Enjoy!
