In a large bowl, whisk together vinegar, dates, olives, capers, garlic, honey, EVOO, Salt and Pepper. Place chicken in a large zip locked bag and pour marinade over. Seal the bag and massage the marinade into the chicken. Let the chicken marinate over night or for up to three days.
Preheat oven to 400 degrees F.
Assemble chicken and marinade on a baking sheet, making sure not to overcrowd the chicken.
Bake for 1 hour or until chicken is cooked through.
Garnish with parsley.
