Apple Cranberry Chicken Salad

Ingredients
  • 2 cooked boneless skinless chicken breasts chopped into small cubes (cooled or chilled)
  • 1 apple cored and finely chopped with or without peel
  • ¼ red onion finely chopped
  • ¼ cup dried cranberries
  • 2 tbsp light mayonnaise
  • 1 tbsp whole grain mustard
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 1 tsp chopped fresh parsley
  • 1 tsp chopped fresh dill
  • 1 tsp chopped fresh sage
Instructions
  1. In a medium bowl, combine all ingredients and mix until well-combined.
  2. Chill for 30 minutes before serving.
