In a medium bowl, combine tomatoes, garlic, basil, vinegar olive oil, honey, salt, pepper and pepper flakes.
Cover bowl with plastic wrap and marinate for 30-45 minutes in the refrigerator.
Preheat oven to 350 degrees F. Line bread slices on a large baking pan and drizzle with olive oil. Toast in oven for 10-15 minutes or until slightly golden.
Transfer bread slices to a serving platter.
Remove tomato mixture from refrigerator and pour heaping table spoonful's of marinated tomatoes over each slice.
Drizzle remaining vinegar over bread. Serve immediately.
