Heirloom Tomato Bruschetta

Ingredients
  • 1 large baguette sliced into one-inch slices
  • 1 cup heirloom cherry tomatoes sliced in half
  • 3 cloves of garlic, minced
  • ¼ cup fresh basil chopped
  • ½ cup balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 1 tsp honey
  • ½ tsp sea salt
  • ¼ tsp fresh ground pepper
  • ¼ tsp crushed red pepper flakes
  • extra virgin olive oil for drizzling
Instructions
  1. In a medium bowl, combine tomatoes, garlic, basil, vinegar olive oil, honey, salt, pepper and pepper flakes.
  2. Cover bowl with plastic wrap and marinate for 30-45 minutes in the refrigerator.
  3. Preheat oven to 350 degrees F. Line bread slices on a large baking pan and drizzle with olive oil. Toast in oven for 10-15 minutes or until slightly golden.
  4. Transfer bread slices to a serving platter.
  5. Remove tomato mixture from refrigerator and pour heaping table spoonful's of marinated tomatoes over each slice.
  6. Drizzle remaining vinegar over bread. Serve immediately.
