High Protein Asian Peanut Stir Fry

Serves: 6 Servings
Ingredients
  • 2 tbsp olive oil
  • 2 boneless skinless chicken breasts cut into small chunks
  • 1 14 oz block of extra firm tofu drained and chopped into cubes
  • 1 red bell pepper chopped
  • 1 cup broccoli chopped
  • ½ cup snow peas
  • ½ cup baby carrots
  • ¼ cup sliced green onions
  • 1 tsp fresh ginger grated
  • ½ cup fresh bean sprouts
  • ¼ cup peanut butter
  • ¼ cup rice wine vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp honey
  • 1 tsp sriracha (optional)
  • black sesame seeds and sliced green onions for garnish
Instructions
  1. In a bowl, whisk together peanut butter, rice wine vinegar, sesame oil, honey and sriracha. Set aside.
  2. In a wok, heat olive oil.
  3. Add chicken chunks and cook about six minutes until chicken is fully cooked (not pink) and slightly brown.
  4. Add tofu and cook for two minutes with chicken, stirring constantly to make sure pieces don’t stick to pan.
  5. Add bell pepper, broccoli, snow peas, carrots, green onions, and ginger.
  6. Cook for two minutes to heat veggies.
  7. Add bean sprouts. Pour peanut sauce over contents of wok and gently combine with tongs. Remove wok from heat.
  8. Serve immediately with brown rice.
  9. Garnish with black sesame seeds and green onions.
