Ingredients
  • 1¼ cup flour
  • ⅔ cup sugar
  • ½ cup EVOO
  • Juice of 2 lemons
  • 1 tbsp lemon zest
  • 3 eggs
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 tbsp powdered sugar for garnish
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease a round 9-inch cake pan.
  3. In a stand mixer combine all ingredients. Mix on high speed for 3 minutes, until batter is completely smooth.
  4. Pour mixture into greased cake pan and bake for 45 minutes or until toothpick comes out clean.
  5. Let cool. Garnish with powdered sugar and serve. Enjoy!
