Lemon Olive Oil Cake

- 1¼ cup flour
- ⅔ cup sugar
- ½ cup EVOO
- Juice of 2 lemons
- 1 tbsp lemon zest
- 3 eggs
- 1 tbsp baking powder
- ¼ tsp salt
- 1 tbsp powdered sugar for garnish
- Preheat oven to 350 degrees F.
- Grease a round 9-inch cake pan.
- In a stand mixer combine all ingredients. Mix on high speed for 3 minutes, until batter is completely smooth.
- Pour mixture into greased cake pan and bake for 45 minutes or until toothpick comes out clean.
- Let cool. Garnish with powdered sugar and serve. Enjoy!
