Spicy Peanut Noodles

Ingredients
  • 1 cup peanut butter
  • 4 tbsp tahini
  • ¼ cup rice wine vinegar
  • ½ cup soy sauce, reduced sodium
  • 1 tsp sesame oil
  • 1 tbsp honey
  • 1 1-inch piece of ginger, roughly chopped
  • 5 garlic cloves, roughly chopped
  • 1 tbsp sambal (or any other Asian chili paste you like)
  • 2 carrots, grated
  • 1 cup broccoli florets, blanched
  • 1 small red bell pepper, chopped into 1-inch slices
  • 2 green onions, thinly sliced for garnish
  • 1 lb linguine
  • 2 tbsp vegetable oil
  • Salt to taste
Instructions
  1. Boil linguine in salted water with 2 tbsp of vegetable oil. Remove after about five minutes or until perfectly al dente.
  2. In a food processor, process peanut butter, tahini, rice wine vinegar, soy sauce, sesame oil, honey, ginger, garlic, and sambal until very smooth.
  3. Toss the linguine with the carrots, broccoli, bell pepper, and peanut sauce.
  4. Garnish with green onions. Either serve warm or chill for a more refreshing meal. Enjoy!
