Sweet Summer Corn Fritters With a Kick

Serves: 12 Fritters
Ingredients
  • 2 ½ cups fresh roasted corn cut off the cobb
  • 1 red bell pepper finely diced
  • ¼ cup roasted diced hatch chiles (seeds and veins removed)
  • 1 cup flour
  • ⅔ cup buttermilk
  • 2 eggs
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp sugar
  • ½ tsp salt
  • unsalted butter for pan
Instructions
  1. In a large mixing bowl, gently whisk together flour, buttermilk, eggs, spices and sugar until combined.
  2. Add corn, bell pepper and chilies.
  3. Heat a medium frying pan on medium heat and melt 1 tsp butter.
  4. Drop ¼ cup of batter onto hot frying pan and cook for about 3 minutes on each side until fritter becomes golden brown and fluffy.
  5. Repeat process until all batter is used.
