Gingerbread Cookies

Ingredients
  • 3 cups all purpose flour
  • 1½ tsp. baking powder
  • ¾ tsp. baking soda
  • ¼ tsp. salt
  • 1 tbsp. ground ginger
  • 1¾ tsp. ground cinnamon
  • 6 tbsp. unsalted butter
  • ¾ cup dark brown sugar
  • 1 large egg
  • ½ cup molasses
  • 2 tsp. vanilla
Instructions
  1. Preheat oven to 375 degrees.
  2. Prepare baking sheets by lining with parchment paper.
  3. In a mixer on low, combine butter, sugar, egg, molasses, and vanilla until creamy.
  4. In a separate bowl, combine all dry ingredients.
  5. With mixer on low, gradually add dry ingredients.
  6. A thick cookie dough will form.
  7. Remove ball of dough and place on floured surface, and roll out with rolling pin until ¼ inch thick.
  8. Use cookie cutters to make desired cookie shapes, and placed on baking sheets.
  9. Bake for 8-10 minutes.
  10. Allow to cool on rack for 30 minutes.
  11. Decorate cookies as desired.
