Crockpot Chicken Vegetable Coconut Curry

Ingredients
  • 1.5 lb chicken breast cut into small cubes
  • 1 medium yellow onion diced
  • 1 red bell pepper diced
  • 1 small eggplant diced
  • 2 garlic cloves minced
  • 1 cup cherry tomatoes
  • 1 cup string beans cut in half
  • 2 14 oz cans coconut cream
  • ½ cup water
  • 2 chicken boullion cubes
  • 3 tbsp tomato paste
  • 1 tbsp honey
  • 3 tbsp curry (choose your favorite blend)
  • 1 tbsp turmeric
  • Salt and pepper to taste
  • 6 lime wedges for garnish
Instructions
  1. Combine all ingredients in a large crock pot and set on lowest setting (approximately 10 hours). Serve with rice.
