Garlicky Sautéed Organic Greens

Ingredients
  • 8 cups organic greens chopped into large pieces
  • 3 tbsp EVOO
  • 4 cloves of garlic thinly sliced
  • ½ cup golden raisins
  • Zest from one lemon
  • ¼ cup toasted pine nuts
  • Salt to taste
Instructions
  1. In a large sauté pan, sauté garlic slices in 2 tbsp EVOO on medium-high heat for about two minutes until they just begin to slightly toast. Remove garlic with a spoon and place in a large bowl. (Note: Do not wait until the garlic has completely browned, as the garlic becomes bitter if it is over cooked.)
  2. Sauté raisins in the same pan for about a minute until they plump. Remove raisins and add to the bowl with the sautéed garlic.
  3. Add remaining tablespoon of EVOO and sauté the greens for about five minutes until they wilt. Add salt to taste.
  4. Toss greens in the large bowl with garlic, raisins, and lemon zest. Garnish with toasted pine nuts.
