Luscious Lemon Bars

Ingredients
  • Crust:
  • ½ lb unsalted butter
  • ½ cup granulated sugar
  • 2 cups all purpose flour
  • 1 tsp vanilla extract
  • ½ tsp salt
  • Filling:
  • 6 large eggs
  • 3 cups granulated sugar
  • 3 tbsp grated lemon zest
  • 1 cup freshly squeezed lemon juice
  • 1 cup all purpose flour
  • powdered sugar for dusting
Instructions
  1. Preheat oven to 350 degrees F.
  2. Using a stand up mixer with a paddle attachment, cream the butter, sugar and vanilla.
  3. In a separate bowl combine flour and salt.
  4. Add flour mixture to wet ingredients gradually with mixer on low until well combined and dough forms a ball.
  5. Press dough into a greased 9 x 13 x 2 inch baking pan.
  6. Bake for 15 minutes and remove from oven and let stand for about ten minutes.
  7. In a separate bowl, whisk together ingredients for the lemon filling until well combined.
  8. Pour over the crust and bake at same temperature for 30 minutes.
  9. Allow to cool completely before cutting into squares and dusting with powdered sugar.
