Perfect Plum Crumble

- For The Filling:
- 4 large black plums, cut into thin slices
- 4 tbsp white sugar
- 2 tsp vanilla extract
- 2 tsp unsalted butter, melted
- zest of one lemon
- 2 tbsp lemon juice
- 1 tsp cinnamon
- For the topping:
- ½ cup steal cut oatmeal
- ⅓ cup all purpose flour
- ⅓ cup brown sugar
- 1 tbsp cinnamon
- 1 tsp salt
- ½ cup unsalted butter, cut into small cubes
- Preheat oven to 400 degrees F. Set aside four small ramekins or miniature Dutch ovens.
- In a large bowl mix together black plum slices, white sugar, vanilla extract, melted butter, lemon juice and zest, and cinnamon.
- Spoon ¼ of the mixture into each of the ramekins/Dutch ovens.
- In another large bowl, mix together steal cut oatmeal, all purpose flour, brown sugar, cinnamon, and salt.
- Generously spoon ¼ of the mixture over each of the ramekins/Dutch ovens. Sprinkle each one with several cubes of unsalted butter.
- Place onto baking sheet and bake for approximately 30 minutes or until golden brown and bubbling on the edges.
- Serve hot and with vanilla ice cream of whipped cream.
