Creamy Avocado Pesto Pasta

- 5 ripe avocados, skin and pits removed
- 5 whole cloves of garlic
- ¼ cup extra virgin olive oil
- ¼ cup fresh lemon juice
- 1 tsp salt
- 1 lb pasta cooked al dente
- Optional Garnishes –
- Toasted pine nuts
- Parmesan cheese
- Fresh basil
- In a food processor, combine avocadoes, garlic, olive oil, lemon juice and salt until it becomes a thick and creamy sauce.
- Toss with your favorite pasta and serve with toasted pine nuts, parmesan and fresh basil.
